I've always had a thing for nacho cheese dip, but on a dairy free diet cheese dip becomes a no go. Using cauliflower to make cheese sauce may seem weird, but I can assure you it's delicious. By mixing in some nutritional yeast (which by the way smells exactly like Doritos to me) it gives your sauce a strong cheesy flavour. The turmeric adds some mild spice flavour and coconut cream adds creaminess. All come together to make this cheesy goodness! Who knew that you could get your veggies from a cheese dip 😀?
2 cups cauliflower
3/4 cup chicken stock
1/2 clove of garlic minced
2 tbsp coconut cream (the thick half of a can of coconut milk)
1/4 cup nutritional yeast
1/2 Tsp turmeric
1/2 Tsp sea salt
1. Chop up 2 cups of cauliflower and add to a sauce pan. Add in the 3/4 cup chicken stock and the minced garlic, then bring to a boil. Reduce to simmer and cover with a lid for around 15 minutes or until the cauliflower is tender.
2. After add the whole cauliflower and chicken stock mixture into a food processor and blend until smooth.
3. Then add the nutritionist yeast, sea salt, turmeric and coconut cream and blend again until smooth.
4. Serve warm with chips, veggies or use as a sauce.
