Cauliflower rice is basically cauliflower put into a food processor and made into the consistency of rice. It's a great grain free option to regular rice. Cauliflower is an excellent source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6. Turmeric is the spice that gives curry its yellow color. It has been used in India for thousands of years as a spice and medicinal herb. Curcumin is the main active ingredient in turmeric. It has powerful anti-inflammatory effects and is an powerful antioxidant. This dish really is delicious and packed with nutrition.
10 Min Turmeric Cauliflower Rice Stir Fry
Time 20 min Makes 3-5 servings
3 cups riced cauliflower
1 cup chopped broccoli
1 cup diced carrots
2 cloves of garlic minced
1/2 cup fresh corn
1/4 onion chopped
1 green onion thinly sliced
1/2 - 1 tsp ground turmeric
pinch of salt and pepper
1. To make the cauliflower rice, pulse cauliflower in the bowl of a food processor until it resembles rice. About 2-3 min and set aside.
2. Warm a skillet to medium heat and add 1 tbsp olive or coconut oil
3. Chop the onions and garlic and add to skillet and cook, stirring often, until onions have become translucent, about 3-4 minutes. Stir in broccoli, carrots, corn, and cook, stirring constantly, until vegetables are tender, about 3-4 minutes.
4. Stir in cauliflower, green onions and turmeric . Cook, stirring constantly, until heated through and the cauliflower is tender, about 3-4 minutes.
To Freeze: Let cool and the add to ziploc bag and freeze. To Warm: Add frozen mixture into skillet and warm throughout and serve.
